Serve underhand. After the serve, the return must bounce, and the next shot must bounce too (the two-bounce / double-bounce rule). After that, volleys are allowed — except you cannot volley while touching the non-volley zone (kitchen).
Recreational and many club games still use classic side-out scoring: games often play to 11, win by 2, and only the serving side scores. Some leagues and formats use rally scoring instead — ask the host before the first serve. When in doubt for sanctioned play, defer to the current USA Pickleball rulebook.
The non-volley zone is the 7-foot area on each side of the net (see court dimensions). Volleying while touching that zone — including the lines — is a fault. Momentum that carries you into the kitchen after a volley still faults if you touch it.
